A Morocco Retreat is not complete until you have eaten fantastic fresh food with the hint of other worlds. We combine our Moroccan and world recipes with ingredients packed with nutritional value. From our zingy green juices, crunchy salads with Moroccan Tahina dressings, fresh fruit salad in the Sahara served in a carved watermelon or a boiled egg at breakfast on the beach staring at the ocean; the experience of taste and the best ingredients are integral to the Retreat programme.
Our Approach to Food
At Morocco Retreats our approach to food is very serious as food and nutrition play a big role in our Morocco Wellness Retreat. Organic, local, simple ingredients are used to create the best menus.
Outside Marrakech we have a vegetable garden and citrus and olive groves. Seasonal produce is sourced daily from our organic garden or local markets which are full of fresh vibrant produce.
Organic marmalades and jams are made by Emma when fruits come into season. The olives from our grove are pressed and provide us with first-pressed organic olive oil. Her local suppliers also include a local butcher who provides fresh meat and a fishmonger who provides fantastic fish from the Atlantic coast.
When on Retreat we try to be wheat and dairy free (we use buckwheat flour, almond flour, rice noodles, eggs and yoghurt) Our carefully selected juices are a great wakeup for the liver in the morning before yoga and meditation and hydration is encouraged at all times.
Emma works closely with Ilham. Food and nutrition are one of the most vital aspects of Morocco Wellness Retreat, while visiting a very magical Morocco.

Emma is passionate about good food and great ingredients. Her extensive travels of the world have provided an eclectic collection of recipes. She works closely with Ilham her chef at Riad Zamzam and Mitti, Manger of the Catering Team, sharing and exchanging ideas. Her main hobby at the moment is collecting ancient Berber and Jewish Moroccan Recipes. Food and nutrition mean a lot to Emma, and that is why she takes great care in sourcing fresh quality ingredients for the Morocco Wellness Retreat.
